В ее ягодах содержатся ключевые компоненты антиоксидантного комплекса – аскорбиновая кислота и фенольные соединения, в том числе антоцианы и катехины, обладающие высокой Р-витаминной активностью. Наличие в больших количествах этих двух витаминов особо ценно, учитывая, что они являются синергистами. Цель настоящих исследований заключалась в изучении 35 сортов смородины черной селекции Всероссийского научно-исследовательского института селекции плодовых культур (ВНИИСПК), входящих в биоресурсную коллекцию института, в условиях средней полосы России (Орловская область) по компонентам антиоксидантного комплекса ягод (аскорбиновой кислоты, антоциановых веществ и катехинов). Установлено, что исследуемые сорта являются источниками биологически активных веществ. Отмечен значительный размах варьирования по каждому компоненту: от 81,8 (‘Арапка’) до 249,4 мг/100 г (‘Надина’) – по аскорбиновой кислоте; от 74,1 (‘Блакестон’) до 319,8 мг/100 г (‘Ершистая’) – по антоцианам; от 86,9 (‘Десертная Огольцовой’) до 431,7 мг/100 г (‘Экзотика’) – по катехинам. Рассчитанные по каждому сорту коэффициенты вариации показали, что погодные условия вегетационного периода в большей степени влияют на накопление сортами смородины черной Р-активных антоцианов в ягодах, чем аскорбиновой кислоты. По каждому показателю выделены сорта с повышенным или высоким значением: 51,4 % – с содержанием аскорбиновой кислоты более 150,0 мг/100 г; 54,3 % – с содержанием антоцианов более 150,0 мг/100 г; 31,4 % – с содержанием катехинов более 250,0 мг/100 г. В качестве источников антиоксидантной активности для использования в селекции на улучшенный химический состав плодов выделены генотипы: по содержанию аскорбиновой кислоты (200,0 мг/100 г и более) – ‘Десертная Огольцовой’, ‘Муравушка’, ‘Надина’; по содержанию антоцианов (более 200,0 мг/100 г) – ‘Арапка’, ‘Ассоль’, ‘Ершистая’, ‘Зуша’, ‘Ладушка’, ‘Надина’, ‘Нюра’, ‘Юбилей Орла’; по содержанию катехинов (более 250,0 мг/100 г) – ‘Ариадна’, ‘Ассоль’, ‘Ершистая’, ‘Зуша’, ‘Кипиана’, ‘Муравушка’, ‘Надина’, ‘Нюра’, ‘Орловия’, ‘Экзотика’, ‘Юбилей Орла’; по комплексу биохимических признаков – ‘Зуша’, ‘Кипиана’, ‘Ладушка’, ‘Муравушка’, ‘Надина’, ‘Чудное Мгновение’, ‘Экзотика’.</p></abstract><trans-abstract xml:lang="en"><p>Black currant refers to polyvitaminic berry crops. Its berries contain key antioxidant components, namely ascorbic acid and phenolic compounds, including anthocyanins and catechins, characterized by high activity of rutin. The abundant presence of the two vitamins is particularly valuable, considering their synergistic eff ects. The present study is aimed at investigating 35 black currant varieties developed by the Russian Research Institute of Fruit Crop Breeding and included in its genetic resource collection. The study was conducted under the conditions of the Central Russian region (Orlovskaya Oblast), focusing on the antioxidant components in the berries (ascorbic acid, anthocyanins, catechins). The studied cultivars have been established as sources of biologically active compounds. A signifi cant range of variability has been noted for each component: from 81.8 mg/100 g (‘Arapka’) to 249.4 mg/100 g (‘Nadina’) for ascorbic acid; from 74.1 mg/100 g (‘Blakeston’) to 319.8 mg/100 g (‘Ershistaya’) for anthocyanins; and from 86.9 mg/100 g (‘Desertnaya Ogoltsovoy’) to 431.7 mg/100 g (‘Ekzotica’) for catechins. The coeffi cients of variation calculated for each cultivar indicate that the climatic conditions during the growing season have a greater impact on the accumulation of anthocyanins with high activity of rutin in blackcurrant berries than on ascorbic acid content. The analysis revealed varieties of crops with elevated or high levels for each indicator: 51.4 % of crops exhibit ascorbic acid content exceeding 150.0 mg/100 g; 54.3 % demonstrate anthocyanin levels above 150.0 mg/100 g; and 31.4 % contain catechins exceeding 250.0 mg/100 g.
